Going Gluten/ Lactose Free

Hi All! Sorry it's been so long since I've posted... I've been having a lot of problems with my stomach after my gallbladder surgery and am quite frusterated! They don't let you know all of the problems after the surgery that you can have!

I finally got in to see a naturopath that I really like on Friday. She put me on a no gluten, lactose or corn or potatoes diet!

It's going to be tough finding everything gluten and lactose free, but I'm hopeful that this will make me feel better. I'm also going on a couple supplements and my naturopath said that I could be back to 100%, still eating healthy, but that I could go back to eating whatever I want (within reason). It was like talking to a magician, I couldn't and still can't imagine that I can go back to having the odd treat or drink of pop without feeling sick!

I'm going to be posting healthy (gluten/lactose free) recipes and snacks that I'll be trying!

Today I tried "Quinoa porridge", Quinoa has amazing stats! Lots of protein and fibre!

Ingredients
1-2 cups of water.
¾ cup cooked quinoa
½ cup unsweetened vanilla almond milk
1 tbsp maple syrup
2 tsp raw walnuts
¼ banana mashed
Sprinkle of cinnamon


Directions
Combine quinoa, milk, and water in a small saucepan and place over a boiling heat. Once the mixture comes to a boil, turn it down to a simmer and allow it to cook for about fifteen minutes or so or until the porridge has thickened a bit and is heated through.

Stir in walnuts and bananas and top with cinnamon.

Calories: 388 Fat: 8.5g Saturated Fat: .5g Carbs: 65g Fiber: 6.7g Protein: 14g

My first foodie pictures!

Hi everybody! I hope you all had a great weekend! My weekend started Thursday night as I had Friday off! I saw my personal trainer who I hadn't seen in forever due to scheduling conflicts, but we finally found a night to do every week! It was good, she always makes weight loss seem like a battle that can be won! I biked on Saturday and today I went kickboxing! I was glad and happy with myself that I got so much excercise in to make up for the rest of the week! My eating has been pretty good. I'm going to a naturopath in March and I'm quite looking forward to it. Hoping I can get some of my stomach issues following my gallbladder removal surgery taken care of! I made some delish recipes I found on the 'recipes sharing board' on the x-weighted challenge webiste. I made 2.

First I made the "breakfast cookie"



Ingredients

1 1/4 cup regular oatmeal
1/4 cup flour
1/2 dry skim milk
1 cup applesauce
1 1/2 tsp cinnamon
1 1/2 tsp baking powder
1/4 raisins
sprinkling of sugar

mix all together well in mixing bowl, put on baking sheet (makes 4 big cookies)

Bake at 375 for about 10-15mins or until browned.


The second was banana walnut muffins!



Ingredients

1/4 c. applesauce
1 c. sugar
3 bananas
1 c. whole wheat flour or regular flour
1/2 c.ground flax seed
1 tsp.baking soda
2 eggs
1/2 c. walnuts

mix all together well in mixing bowl, put in a muffin pan (makes 12 big muffins or 24 mini muffins)

Bake at 375 for about 10-15mins or until browned.


I tweaked this recipe as well, I have started to sub apple sauce for butter/margerine and I don't notice the difference!

As I get ready for this week I'm thinking what my short term goals are for this week and I'm making them simple so I stay on track. Gym atleast 3X, but 5X would be ideal. Also to eat healthy, I would like to try 2 new recipes this week!

Frusteration and Yoga

Hi all! I'm so glad it's hump day today! I stayed home today because I was up half the night not feeling well. I had my gallbladder removed back in September and have been having some tummy troubles again.

Have any of you guys had your gallbladder out and troubles afterwards? I've really been watching what I'm eating, so I'm at a loss!

In the afternoon I was feeling okay, so I did the Biggest Loser weight loss yoga with the heater on, it was quite nice, I felt really relaxed. It's a really good Yoga DVD, if you're looking for something to do at home!

I'm debating going to a Naturopath too, I wonder if they can help me, hmmmmm

X-Weighted challenge!

I made myself get up this morning to go to the gym. I'm glad that I did and feel great that the gym is over with! I went to a new class that I didn't know much about, it turned out to be a step class. I usually don't like step classes, I'm not "step coordinated" but this one was good, it was intense and we had weights and bands and I quite liked it! It kicked my butt too!

My plan this week is to do AT LEAST 3 days at the gym, I went to Zumba yesterday and "Innovative Interval today" , so the week has started off well!

Now I'm at work, eating a sandwich and trying to think of something for dinner that involves chicken.. any ideas?

On a bad note, I gained 1lb this week and I was super dissapointed, I've been tracking and working out, so what gives? I was really down about it, but now I realize that I can't allow the scale to own me and just keep trying my best...

The x-weighted challenge is telling me I'm not on track. It wants me to lose 2.8lbs/ week, I've lost 2.5 lbs per week (with my big loss last week), so now to get back on track, I need to lose over 3lbs this week! Heres to a big loss again!

I kinda feel like the x-weighted challenge doesn't reflect the x-weighted show weights, paul usually says 2lb/week not 3, I think almost 70lbs in 6 months is quite excessive, but I'm hoping I can pull it out of my hat!

How are you guys feeling about the weight you have to lose on the challenge?

My Mother's Birthday

My Mother's birthday is today, she would have been 53, I sadly lost my mother when she was at the young age of 43. I have been trying a lot lately to 'celebrate her life' instead of 'mourning her death' and although I have many happy memories of my mom. It's still hard on days like today when I wish she was here and I was spoiling her with presents and celebrating her day!

I'm going to stay on track today and not eat my feelings because that's what I've been doing for a long time.

I'm going to try and stay proactive and positive and thankful for everything that is in my life!

Remember to not take anyone or anything for granted and tell the people you love that you love them!

X-weighted, the Canadian biggest loser?

I love the biggest loser, but I can't seem to get into this season! I felt like turning it off last night, the whole thing with the green team was lammmme! I would give anything to be on the biggest loser, but unfortunatly it doesn't come to Canada! I am in the next best thing, x-weighted the challenge. The challenge is going pretty well so far, I'm hoping I can keep this pace up for the next 25 or so weeks. Sometimes it gets to me and is a bit daunting that I need to lose 69lbs just to be qualified, not even to win. I mean, I know I'm doing this to get healthy/fit etc.. but I really want to go see the Plak man!

I have been working out a lot this week and I forgot how tiring doing a lot of heavy weights was! My muscles are soooo tired!

I made the most amazing dinner tonight (I should have taken pictures) I always forget! I need to get into the habit I guess! I made a casserole! It had egg noodles, cut up chicken breast, cut up asparagus, mushrooms and cream of asparagus soup, mix all together in a casserole dish and cook for about 50 mins! mm mm

My food has been pretty good this week. I realized that I can't be trusted with Chocolate, I thought I was ready to portion out the delicous dove chocolate until a wave of hunger came over me in the afternoon, bored at me desk and I devoured the rest of the bar = GIANT FAIL. I am trying to figure out a balance, it's hard sometimes though. I feel like sometimes it's either I have to be perfect or not do it at all!

Weigh in!

I weighed in this morning for my x-weighted challenge and I lost 5.8lbs! I am very very happy with this! I now have 63.2lbs left, which is still a little daunting, but I think I can do it! I also passed my exam I wrote in December! Very good weekend so far!! I saw sherlock holmes today, it was pretty good, but slow at parts, I think they could have cut 20mins out! It's saturday and I'm being a little laxed with food, but still aware! Have a great weekend everyone!!
